Less is More?

chickenscampi-1.jpg

The concept "Less is More" and I just don't see eye to eye. Did you know that when you are shampooing your hair if you cannot get the shampoo to lather, you need to add more water, not more shampoo? I'm always piling on more shampoo! Oh - and those concentrated cleaning products where you just need to use a thimble full for an entire load of laundry? I have such a hard time believing that. To me, if I don't have a full measuring cup of laundry detergent to add to my laundry, I do not feel like it is going to work.

There are some things in which I truly believe that "Less is More"  does not apply. Those things would have to do with butter, garlic and onions. No way could less be more. Yes...with butter less is more "fitting into your skinny jeans", but less butter does not make a dish any better.

I made a dish the other night that was a delicious combination of tons of butter, green onions and lots of garlic.  Less was definitely not more with this dish as I added more garlic and green onion than the recipe called for and ended up with a completely wonderful meal.

If you are a believer of "Less is More" you might want to skip this recipe. If you believe that the more the better, than add a little extra of what you love to this recipe and enjoy!

3-4 servings
30 min 10 min prep
3-4 chicken breasts, cut into pieces
1/4 cup olive oil
1/2 cup butter
2 teaspoons minced garlic
1/2 cup chopped green onions
1 teaspoon italian seasoning
1/2 teaspoon salt

pepper
4 roma tomatoes (cut into 1 inch pieces)

rice or noodles, enough for about 3 people
  1. Put olive oil and butter in skillet on low heat.
  2. Add the green onions and minced garlic and saute.
  3. Add Italian seasoning, salt and pepper.
  4. Put chicken that has been cut into pieces in the skillet with the garlic onion and seasonings.
  5. Heat until chicken is no longer pink.
  6. Let the chicken sit with the other ingredients in the skillet for a few moments on low just to get the seasoning set in really well.
  7. Put the tomatoes in to just heat through.
  8. Serve with the rice or noodles.

Yes, I agree, more butter, but ESPECIALLY more garlic and onions!! I usually at least double the amount of garlic called for in recipes. This looks fantastic!!

I agree! I'm always amazed at how much more garlic I end up putting in recipes. I thought it was maybe because I'm Italian, and high garlic tolerance was in my genes or something---nice to know I'm not the only one!

I never believe that there's enough laundry detergent either. I always pour in extra, even though the washer will say "suds" (which means I've put too much) but it just seems like such a small amount to put in. And extra onions and garlic are always a great thing to add!

You've tempted me on this one. It looks and sounds absolutely delicious.

Water? Nope, don't believe it.
Ditto on the concentrated anything.
Butter....I would like to think I wouldn't do that but then I remember tossing in an extra 'nob' on the beans last night..
Okay, guilty on all counts! Love the Scampi! More garlic, always...

Lets test this theory, shall we??

less jelly beans means more sugar cravings, more jelly beans means tummyaches (ok, so less is more here and that is OK)

less butter is more sadness, especially in your cookies (not OK)

less garlic is more vampires (theoretically, and not OK)

less shampoo/toothpaste/soap means more showers/brushing/washing means more water so not OK

so....what have we learned? Less is NOT more!

When it comes to garlic, I have to confess that I am of the "more is best" school of thought :-)

That's a bowl of love right there.

That sounded like a nice trivia to me! Ok, and the more the better, especially when it means easier and more delicious which seems to be the case here! One funny thing is happening with your pictures, bloglines show them so large, and to me this is great, I can see all the details, but here they are displayed smaller.Have a great weekend!

Less=More when it comes to make-up
Less does not = more when it comes to frosting on a cupcake, yum.

Some times less is more, your dish would not be one of them. Bring on the butter and lots more garlic & onion!! Great job Kristin.

I agree about the shampoo thing...it just doesn't make sense to have to add more water.

The dish looks delish!

Hugs!
