Pack on the Pounds Cake

DSC_0039.jpg

History shows that the name pound cake originated from the fact that the original pound cake recipes contained one pound each of butter, sugar, flour and eggs. I am not convinced that is the real reason. I think the real meaning behind the name pound cake comes from the fact that you will certainly pack on the pounds if you eat a cake with that much butter and sugar in it. I think that those pounds are well worth it when you have something as fabulous as a pound cake. There is nothing quite like a real dense and moist pound cake to satisfy a sweet tooth. With a real pound cake, each bite seriously melts in your mouth. Mmmmmm...

DSC_0042.jpgAs much as I love real pound cake, I'm not looking to add on a bunch of weight right now. I wish I had the dilemma of trying to gain weight... unfortunately, gaining weight is really not something that is difficult for me to do. Since I am kind of trying to lose some of this baby fat, I decided that making a real pound cake probably wasn't in my best interest. Instead, I fell for the picture of a Golden Lemon Pound cake that was featured in a Land O' Lakes advertisement in this months issue of Gourmet magazine.

This cake is by no means light... it still is jammed full of calories, but the one slice I had was well worth it. I gave part of the cake away to my neighbors across the street, part of the cake served as dessert for a meal with our friends last night, part of the cake was eaten for breakfast this morning by my husband, and the last few pieces will be gone before the day is up (I  hope!).

If you are looking for something that would be a great addition to your Easter brunch, this springtime lemon pound cake should do the trick. For the recipe, visit:

When I was much younger and didn't think about fat and calories, I used to eat pounds of pound cake! Sara Lee, as I recall. But those days are gone, I'm afraid. However...I must say that this recipe is calling to me. You see, I just bought some strawberries on sale, and the combination....well....You know how that goes....

Hmm, I could eat some pound cake now. Good thing I put the other parsnip cake I made away in the freezer a few hours ago!

Kristen, when I was trying to get rid of the baby fat. I was told to eat everything I wanted but not in huge portions. Eat 4 to 5 times a day in smaller amounts. And of course walk, exercise, swim, whatever fits in your lifestyle. I used to put Soeren in his buggy and power walk through the park. It really helped. I still keep this way of thinking in my head. I do not try to resist on food. I just take smaller portions.
The cake looks really yummy! and good luck with the baby fat. I'm rooting for ya!

Even the mixing bowl and wooden spoon would be a problem for me! I would have to make brussel sprouts every night~ no danger there.
That looks like a wonderful cake. I really love baking cakes, most of the time one piece is all I want. But when it's my favorite cakes - the only hope is to give it away fast!

Running from the icing. I love the picture with the icing flowing off of the plate and onto the table. GENIUS! Now, I'm going into hiding from pound cake. PS...If you ever grill up a piece in a skillet...OMG!

Oh my that first photo with the icing dripping down the sides of the cake is just divine. All I can say is can I please have a slice? The beauty of the pound cake is that because it is so dense, a little slice is enough to satisfy.

Thanks for your kind words over on countrygirl dearest friend. Sometimes I want to move back to the country just so I am not overwhelmed with that guilty feeling of always having to do something in NYC, because it is available. I would love to feel like I have NOTHING to do. But, alas, I do know that even in the country other wonderful things begin to fill up your free time, like learning how be a domestic diva baker like yourself.

I bought a breadmaker today, you would be so proud of me! I can't wait to use it.

You pound cake looks perfect. I always love the refreshing taste of lemon in desserts.

You can indulge, you just have to exercise ridiculously to get your metabolism up and then the pound cake is yours :)

I am with you on losing weight. I have been rather unmotivated and got off my exercise bandwagon. I need to hop right back on it.

But man oh man, that lemon pound cake looks heavenly. Maybe I"ll make it for Easter.

Boy, that looks fabulous!! I remember my mother made an authentic pound cake and it was actually a little too dense. I think your version would taste much better. It looks so good!
